Preparation method
- Cook the rice in salted water until very soft.
- Drain any excess water if necessary.
- In a blender, process the cooked rice with the egg, parsley, cilantro, and chopped scallions until smooth.
- Transfer the mixture to a pot.
- Add the wheat flour gradually, stirring to combine.
- Place the pot over low heat, cooking the dough while stirring constantly until it pulls away completely from the bottom of the pot, forming a ball.
- Season with salt to taste.
- Remove the dough from the heat and allow it to cool slightly.
- On a clean, lightly floured surface, roll the dough into ropes about 2 cm in diameter.
- Cut the ropes into pieces approximately 2 cm long.
- In a large pot, bring a generous amount of water to a boil with salt and about 4 tablespoons of vegetable oil.
- Add the gnocchi to the boiling water in batches to prevent sticking.
- Remove the gnocchi from the water as soon as they float to the surface, indicating they are cooked through.
- Drain the cooked gnocchi and, if desired, sauté them in a pan with the remaining vegetable oil, or serve directly with your preferred sauce.
