Ingredients
1 egg
1/2 kg wheat flour
2 tablespoons oil
1 cup water
1 cube fresh yeast
25 g sugar
15 g salt
1/2 kg wheat flour
2 tablespoons oil
1 cup water
1 cube fresh yeast
25 g sugar
15 g salt
Where to find ingredients
Look for the ingredients in the flour aisle, baking section, and fresh produce area of your local supermarket or grocery shop. Fresh yeast is usually sold at the bakery counter or chilled dairy section; if you can’t find it, substitute with active dry yeast.
Preparation method
- Mix the yeast with a small portion of the flour and a little of the water to create a sponge
- Let the mixture rest for about 10 minutes to activate the yeast
- Add the remaining flour, the egg, the sugar, the salt, the oil and the rest of the water gradually
- Knead well until you have a smooth, very soft dough
- Shape balls in the size you prefer and let rest for 15 minutes under a clean kitchen towel
- Roll out each ball with a rolling pin, add the filling of your choice and seal the edges well as if making a pastel
- Place the fogazzas on a greased baking tray and let rest briefly before frying
- Fry in hot oil until golden on both sides and drain on paper towels
Observations
Fogazza is a fried savoury pastry with a light, soft dough, very popular at Brazilian snacks and parties. This recipe uses fresh yeast and a simple kneaded dough, giving you a fluffy result that pairs beautifully with a wide range of traditional savoury fillings.
