Homemade Potato Dumplings (Nhoque de batata)

Ingredients

6 medium potatoes
1 cup all-purpose flour
Salt to taste
500g ground beef
1/2 onion, finely chopped
1 tablespoon olive oil
2 beef bouillon cubes
1 can tomato sauce
Grated cheese to taste

Where to find ingredients

You can find these fresh ingredients at local markets or supermarkets like Shoprite or Chipiku Plus. Choose starchy potatoes for the best texture. If preferred, hard-grated Parmesan can be used as a substitute for standard grated cheese.

Preparation method

  1. Boil the potatoes in water until they are tender.
  2. Peel the potatoes and pass them through a potato ricer while they are still hot.
  3. Gradually add the flour and salt to the potatoes, kneading well until you obtain a homogeneous dough.
  4. Place the dough on a floured surface and shape it into thin logs.
  5. Cut each log into pieces approximately 2 cm long.
  6. In a large pot, bring plenty of salted water to a boil.
  7. Once boiling, add the gnocchi in small batches, waiting for them to rise to the surface.
  8. Prepare a bowl with cold water and a colander. Remove the cooked gnocchi with a slotted spoon and place them in the colander for a thermal shock.
  9. Repeat the process until all the dough is cooked.
  10. Drain the gnocchi well and set aside in a baking dish.
  11. Finely dice the onion and sauté it in a pan with the olive oil.
  12. Add the ground beef and the beef bouillon cubes to the sautéed onion.
  13. Stir well and, once the meat is cooked, add the tomato sauce.
  14. Allow the sauce to simmer for another 4 minutes.
  15. Pour the meat sauce over the reserved gnocchi.
  16. Sprinkle with grated cheese.
  17. Place in the oven to gratiné until golden.
  18. Serve hot.
