Ingredients

45 g fine bulgur wheat
200 g chopped tomato, seeded
1 chopped onion
2 chopped cucumbers
1 bunch chopped parsley
Chopped mint
Chopped parsley
3 tablespoons lemon juice
2 tablespoons olive oil
Salt to taste
Black pepper to taste
1/4 teaspoon nutmeg

Where to find ingredients

Fine bulgur wheat can typically be found in the grains or international foods aisle of most supermarkets. It is also commonly available at Middle Eastern or Mediterranean specialty stores and online.

Preparation method

  1. Place the bulgur wheat in a bowl
  2. Cover with water and let it hydrate for 2 hours
  3. Wash the bulgur wheat under running water
  4. Drain well
  5. Squeeze the bulgur wheat with your hands to eliminate all moisture
  6. Rinse the chopped onion in cold water and drain
  7. Mix the bulgur wheat, onion, and other ingredients
  8. Set aside only the tomato for the final moment
  9. Cover the container and refrigerate for at least 8 hours
  10. Incorporate the chopped tomatoes just before serving

Observations

This recipe balances the texture of the bulgur with the freshness of the vegetables and aromatic herbs. Chilling in the refrigerator is essential for the flavors to meld perfectly.
