Ingredients
1 kg pumpkin
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
Where to find ingredients
Look for pumpkin in the produce section, garlic in the fresh herbs and aromatics aisle, olive oil in the cooking oils section, and salt in the pantry staples aisle. If needed, use another firm cooking pumpkin as a substitute.
Preparation method
- Peel the pumpkin and cut the flesh into cubes about 2 cm across
- Finely chop the garlic cloves
- Place a large pan or skillet over medium heat with the olive oil
- Add the garlic and sauté for just 1 minute to perfume the oil, taking care not to let it burn
- Add the pumpkin cubes and the salt to the pan
- Stir occasionally for 10 minutes, until the pumpkin begins to soften
- Cover the pan and reduce the heat to low
- Cook for 5 minutes so the pumpkin finishes softening in its own steam
- Remove the lid and keep stirring while mashing the pieces with the back of a wooden spoon until you reach the texture you prefer
- Turn off the heat and serve immediately
Observations
With a lightly rustic texture, this purée is a practical, wholesome way to add variety to everyday meals.
