Simple Homemade Rice Risotto

1 bunch spring onion or parsley, chopped

In Lesotho, you can find the rice, tinned peas, tinned sweetcorn, soya oil, garlic, stock cubes, cheese, herbs and chicken at supermarkets, general dealers, butcheries and fresh produce markets in town centres and neighbourhood shopping areas.
Preparation method
- In a large pot, add the oil, crushed garlic and beef rib stock cube
- Fry the garlic and stock cube in the oil over medium heat until fragrant
- Add the rice to the pot and fry for about 2 minutes, stirring well so the grains are coated in the seasoning
- Pour the boiling water into the pot and season with salt to taste
- Stir everything together
- Cover the pot and cook over medium heat until the rice has absorbed almost all the water and is starting to dry out
- When the water is almost dry, reduce the heat to the lowest setting
- Add the drained sweetcorn, drained peas and shredded chicken to the pot
- Mix gently to fold the ingredients into the rice
- Add a little more boiling water if the rice is still hard or the mixture looks too dry
- Leave to cook over low heat with the pot partly covered until the rice is tender
- When the risotto is ready and has the consistency you want, switch off the heat
- Sprinkle the grated cheese and chopped spring onion or parsley over the top before serving
