Pressure cooker cateto brown rice (Arroz cateto na panela de pressão)

Ingredients

1 cup cateto brown rice
1/2 medium onion
1 tablespoon olive oil
2 cups water
1 bay leaf
1 teaspoon salt

Where to find ingredients

Cateto brown rice may be found in health food shops, larger supermarkets or stores with Brazilian and international ingredients. Onion, olive oil, bay leaves and salt are available in supermarkets and general food shops. If cateto brown rice is unavailable, use short-grain brown rice as a substitute, keeping cateto brown rice as ideal.

Preparation method

  1. Peel and finely chop the onion
  2. Place the pressure cooker over medium heat without the lid
  3. When the pan is hot, add the olive oil, then the chopped onion and bay leaf
  4. Season with the salt and sauté the onion until wilted
  5. Add the cateto brown rice and stir well for about 1 minute, making sure all the grains are coated in olive oil
  6. Pour the water into the pan and mix
  7. Close the pressure cooker and cook over high heat
  8. As soon as the pan starts to hiss or whistle, lower the heat and cook for another 15 minutes
  9. Turn off the heat and wait for all the steam to release naturally before opening the pan
  10. Loosen the rice grains with a fork
  11. Transfer the cateto rice to a bowl and serve straight away
