Where to find ingredients
Find green beans and specific Brazilian items like paio and queijo coalho at international specialty food stores or well-stocked local butcher shops. Standard pantry staples like rice, onions, and garlic are available at any local supermarket.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and cook them in a pot with 2.5 litres of cold water and the beef stock cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the oil in a separate large pot.
- Sauté the sliced paio, grated onion, and crushed garlic in the oil until browned.
- Add the rinsed and drained rice along with the chopped coriander to the pot, sautéing for a few minutes to toast the grains.
- Incorporate the cooked beans along with their cooking liquid into the rice mixture.
- Stir everything thoroughly, cover, and cook over low heat until the rice is tender and the consistency is moist and slightly creamy.
- Evenly arrange the slices of queijo coalho over the top of the rice.
- Cover the pot once more and allow the residual steam to melt the cheese for a few minutes.
- Serve the Baião de Dois hot, optionally accompanied by fried or roasted carne-de-sol.
Observations
Baião de Dois is a quintessential Brazilian dish, deeply rooted in the culinary heritage of the North and Northeast regions. This flavorful combination blends rice and beans with smoky sausage (paio), squeaky queijo coalho cheese, and aromatic herbs. It is a hearty, satisfying meal that is straightforward to prepare, making it just as suitable for a family weeknight dinner as it is for a weekend celebration.
