Sun-dried Beef Stuffed Pumpkin: Creamy Filling (Carne seca na moranga)

Ingredients

1 kilogram cooked, shredded sun-dried beef, fat removed
2 garlic cloves, minced
200 grams heavy cream
Salt and black pepper to taste
200 grams tomato pulp
1 medium-sized pumpkin, cleaned and seeded
200 grams creamy requeijão
Chopped fresh herbs to taste
4 tablespoons olive oil
1 onion, grated

Where to find ingredients

Sun-dried beef (carne-seca) can be found in specialty meat shops or international markets. For the requeijão, look for Brazilian creamy cheese; if unavailable, a high-quality cream cheese or labneh serves as a suitable substitute.

Preparation method

  1. Cut a small lid from the top of the pumpkin and remove the seeds with a spoon.
  2. Wash the pumpkin and the lid thoroughly.
  3. Place water in a large pot and bring to a boil.
  4. Without touching the water, rest the pumpkin upside down over the pot to steam until tender, approximately 30 minutes.
  5. Repeat the process for the lid.
  6. Remove the pumpkin from the steam and let it cool slightly.
  7. Set aside.
  8. In a pan, heat the olive oil and sauté the garlic and onion until golden.
  9. Add the tomato pulp, salt, pepper, and fresh herbs.
  10. Mix well and add the shredded sun-dried beef.
  11. Cook for a few minutes to allow the flavors to meld.
  12. Add the heavy cream and half of the requeijão.
  13. Stir until you achieve a creamy and homogeneous filling.
  14. Carefully spread the remaining half of the requeijão inside the prepared pumpkin.
  15. Fill the pumpkin with the beef and sauce mixture.
  16. Garnish with fresh herbs on top.
  17. Place the stuffed pumpkin in a preheated oven at 180°C for about 20 minutes or until heated through and lightly browned.
  18. Serve immediately, accompanied by white rice or a side salad.
