2 medium papayas, with fresh pulp
250ml heavy cream for whipping
2 tablespoons chopped cashew nuts
2 medium papayas, with fresh pulp
250ml heavy cream for whipping
Where to find ingredients
Papayas are widely available in most grocery stores and supermarkets. Look for ripe papayas, which will yield easily to gentle pressure. Cashew nuts can be found in the baking or snack aisle of supermarkets, or at specialty nut stores. Heavy cream, also known as whipping cream, is typically found in the dairy section of any grocery store.
Preparation method
- Cut the papayas in half and remove all seeds
- Scoop out the flesh from one papaya and blend until you have a smooth puree
- Dice the flesh from the second papaya into small pieces and set aside
- Whip the heavy cream with the sugar using an electric mixer until stiff peaks form
- Gently fold the papaya puree into the whipped cream, being careful not to deflate it
- Add the diced papaya pieces and gently incorporate them
- Pour the mixture into ice cube trays or a suitable container and freeze for at least 4 hours
- To unmold, quickly dip the bottom of the container in warm water
- Cut the ice cream into cubes, arrange in bowls, and top with the chopped cashew nuts
- If desired, add a few drops of lemon juice over the bowls for a citrusy touch
