Easy Plantain Farofa (Farofa de banana-da-terra)

Ingredients

2 green plantains (banana-da-terra)
2 cups yellow flaked corn flour (farinha de milho amarela flocada)
75 g butter, cubed
1 tbsp vegetable oil
Salt to taste
Freshly cracked black pepper to taste

Where to find ingredients

Find plantains, corn flour, and butter at local markets or island grocery stores. If you cannot find farinha de milho, toasted cassava flour (farofa de mandioca) can be used as a substitute, though the texture will be finer.

Preparation method

  1. Trim the ends of the plantains and peel them.
  2. Cut each plantain in half lengthwise.
  3. Slice each half again lengthwise into long strips.
  4. If the strips are too thick, cut them into thirds.
  5. Dice each piece of plantain into approximately 1 cm cubes.
  6. Heat a large non-stick skillet over medium heat.
  7. Add the vegetable oil to the pan.
  8. Place the diced plantains in the pan and season with a pinch of salt.
  9. Sauté for about 6 minutes, stirring occasionally, until lightly caramelized; note that timing may vary based on ripeness.
  10. Reduce the heat to low.
  11. Add the butter cubes to the pan and stir until completely melted.
  12. Season with 1 teaspoon of salt and black pepper to taste.
  13. Add the corn flour gradually, stirring continuously with a spatula to incorporate well.
  14. Toast for another 4 minutes, stirring constantly, until the mixture becomes crisp and golden.
  15. Remove from the heat and serve immediately.

Observations

Farofa de banana-da-terra is a quintessential Brazilian accompaniment, cherished for its unique harmony of textures. The natural sweetness of caramelized plantains creates a wonderful contrast with the crunch of the toasted corn flour, making it a versatile addition to elevate any main course. This recipe is straightforward to prepare, ideal for those seeking a special, flavorful touch in their daily cooking.
