Where to find ingredients
Find fresh herbs, vegetables, and bulgur wheat at local markets or supermarkets. If bulgur wheat is unavailable, cracked wheat serves as a suitable substitute.
Preparation method
- Place the bulgur wheat in a mixing bowl
- Cover with water and let it hydrate for 2 hours
- Rinse the wheat under running water
- Drain thoroughly
- Squeeze the wheat with your hands to remove all excess moisture
- Rinse the chopped onion under cold water and drain well
- Combine the wheat, onion, and all remaining ingredients
- Set aside only the tomatoes for the final stage
- Cover the container and refrigerate for at least 8 hours
- Fold in the chopped tomatoes just before serving
Observations
This recipe strikes a delicate balance between the texture of the cracked wheat and the crisp, aromatic freshness of the vegetables and herbs. Letting the salad rest in the refrigerator is essential, allowing the distinct flavors to meld together perfectly before serving.
