Sautéed escarole with spicy peanuts (Escarola refogada com amendoim picante)

Ingredients

1/2 large head of escarole
1/3 cup roasted, skinless, unsalted peanuts
2 garlic cloves
Extra virgin olive oil to taste
1/4 teaspoon cayenne pepper
Salt to taste

Where to find ingredients

You can find fresh escarole, garlic, and peanuts at local supermarkets or neighborhood green markets in Nairobi and major urban centers. As a substitute, if escarole is unavailable, endive or kale may be used, though the flavor profile will differ.

Preparation method

  1. Separate the escarole leaves and wash them carefully under running water.
  2. Dry the leaves using a salad spinner to ensure they are well-drained.
  3. Stack about 5 leaves, roll them into a cylinder, and slice them into strips approximately 3 cm wide.
  4. Press the garlic cloves with the flat side of a knife to peel them, keeping them whole to infuse the olive oil.
  5. Heat a large non-stick frying pan over medium heat.
  6. Add a drizzle of olive oil, the peanuts, the cayenne pepper, and a pinch of salt.
  7. Sauté the peanuts for about 3 minutes until they are lightly golden.
  8. Remove the peanuts from the pan and set them aside in a bowl.
  9. In the same pan, still over medium heat, add 1 1/2 teaspoons of olive oil and one garlic clove.
  10. Sauté the garlic for 1 minute just to fragrance the oil.
  11. Add half of the escarole, season with a pinch of salt, and sauté for 2 minutes.
  12. Stir occasionally until the leaves are slightly seared while retaining their texture, avoiding the release of excess water.
  13. Remove the first batch of escarole and repeat the process with the remaining leaves.
  14. Arrange the sautéed escarole on a platter and finish by sprinkling the spicy peanuts over the top before serving.

Observations

This side dish features a crisp texture and a gentle hint of spice that elevates the natural flavor of the greens. It is an excellent choice for adding variety to your daily vegetable servings.
