2 carrots
3 tablespoons olive oil
1 1/2 teaspoons paprika

Where to find ingredients
Find fresh cauliflower, carrots, and radishes at local open-air markets or the fresh produce aisle of major supermarkets. High-quality paprika and olive oil are readily available in the spice and oil sections of any grocery store.
Preparation method
- Preheat your oven to 220 ºC.
- Wash the cauliflower florets in a bowl of water.
- Remove the florets from the water with your hands, ensuring any dirt stays at the bottom of the bowl.
- Drain well in a colander.
- Scrub the radishes thoroughly under running water.
- Dry the radishes and slice them in half, or into quarters if they are large.
- Peel the carrots and cut them in half crosswise.
- Slice the thinner end of the carrot into four batons lengthwise.
- Slice the thicker end of the carrot into six batons lengthwise.
- Arrange all the vegetables on a large baking tray.
- Drizzle the vegetables with olive oil.
- Sprinkle with the paprika, salt, and freshly cracked black pepper.
- Toss everything thoroughly to ensure every piece is evenly coated with the oil and spices.
- Spread the vegetables across the tray, leaving enough space between them to ensure they roast evenly and brown perfectly.
- Roast in the oven for approximately 30 minutes.
- Turn the vegetables with a spatula halfway through the cooking time to ensure they brown on all sides.
- Remove from the oven as soon as they are tender and golden.
- Serve immediately.
