Easy Homemade Coconut Fudge (Cocada de Corte)

Ingredients

1 tin of condensed milk
2 measures of sugar (using the empty condensed milk tin)
1 packet of desiccated coconut (100g)

Where to find ingredients

Condensed milk and sugar are readily available at all Kenyan supermarkets. For the desiccated coconut, you can find it in the baking aisle of major retailers like Naivas, Carrefour, or Chandarana Foodplus. If you are unable to find packaged desiccated coconut, you can grate a fresh mature coconut finely and dry it in a pan over very low heat until moisture evaporates, ensuring a more authentic texture.

Preparation method

  1. In a heavy-bottomed pot, combine the condensed milk, sugar, and desiccated coconut
  2. Place over low heat and stir constantly to prevent sticking
  3. Cook for about 15 minutes or until the mixture begins to pull away from the bottom of the pot
  4. Pour the mixture onto a smooth, greased surface, such as a marble countertop or a flat tray
  5. Even out the surface using a greased rolling pin if needed
  6. Allow it to cool down completely until set
  7. Cut the coconut fudge into squares or your preferred shape

Observations

Cocada de corte is a classic Brazilian treat, cherished for its firm texture and deep, sweet coconut flavour. Traditionally prepared at home, it’s a fuss-free option for celebrations, children's parties, or just to brighten up your day.

This simplified recipe uses pantry staples and a straightforward method, resulting in a delicious batch of coconut squares that everyone will love. Its quick preparation makes it ideal for anyone looking for an authentic homemade sweet without the hassle.

If you find the texture too soft, simply cook it for a few minutes longer over low heat. Patience is key—letting it cool completely on a flat, greased surface ensures the perfect sliceable consistency.
