Ingredients
1 tin sweetened condensed milk (395 g)
Where to find ingredients
Sweetened condensed milk in tins is common in supermarkets, grocery shops and baking aisles, often near canned milk, cake ingredients and dessert items. Use sweetened condensed milk for the proper texture; ready caramel is only a substitute.
Preparation method
- Remove the paper label from the tin of sweetened condensed milk
- Use a small knife to remove any glue residue so it does not clog the pressure cooker valve
- Place the tin of sweetened condensed milk inside the pressure cooker
- Add water to the cooker until the tin is covered, leaving about two fingers of water above it
- Close the pressure cooker and put it over medium heat
- Once the cooker starts to whistle, lower the heat if needed and cook for 20 minutes
- Turn off the heat and let the steam release naturally. Do not force the steam out
- When all the pressure is gone, carefully open the lid
- Use tongs to take the hot tin out of the cooker so you do not get burnt
- Let the tin cool completely for at least 2 hours before opening
- For the best result, make the doce de leite the day before serving
