150g queijo coalho, thinly sliced
500g green beans (feijão verde)
2 beef bouillon cubes
3 tablespoons vegetable oil
1 paio sausage, sliced into rounds
1 onion, finely grated
1 clove garlic, minced
1/2 tablespoon fresh cilantro, chopped
2 1/2 cups long-grain white rice
150g queijo coalho, thinly sliced
Where to find ingredients
Find green beans and onions in the produce section of local supermarkets or farmers' markets. The specialized paio sausage and queijo coalho can often be sourced at Caribbean specialty butchers or gourmet Latin American food importers. If unavailable, high-quality smoked chorizo serves as a common substitute for paio, and halloumi is the closest available substitute for the firm, grilling-style texture of queijo coalho.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a pot with the 2.5 liters of cold water and the beef bouillon cubes.
- Cover the pot and simmer over low heat for approximately 1 hour, or until the beans are tender.
- While the beans are cooking, heat the vegetable oil in a separate large pot.
- Sauté the sliced paio, grated onion, and minced garlic in the oil until golden and fragrant.
- Add the rinsed and drained rice along with the chopped cilantro to the pot, sautéing for a few minutes to toast the grains.
- Pour the cooked beans along with their cooking liquid into the pot with the rice.
- Stir all ingredients together, cover the pot, and cook on low heat until the rice is tender and the mixture is moist and creamy.
- Evenly arrange the slices of queijo coalho over the top of the rice mixture.
- Cover the pot once more and allow the residual steam to melt the cheese for a few minutes.
- Serve the Baião de Dois hot, optionally accompanied by fried or roasted carne-de-sol.
