Ingredients

1 cup (tea) black-eyed peas
4 cups (tea) water for cooking
1 medium red onion
1/2 yellow bell pepper
2 medium tomatoes
1/4 cup (tea) extra virgin olive oil
2 tablespoons white wine vinegar
Juice of 1 lemon
1/4 cup (tea) fresh cilantro leaves
Salt to taste
Freshly ground black pepper to taste
