Ingredients
100 g of dehydrated grated coconut
120 ml of warm water
4 eggs
3 egg yolks
400 g of sugar
30 g of butter
120 ml of warm water
4 eggs
3 egg yolks
400 g of sugar
30 g of butter
Where to find ingredients
Find these ingredients at any local supermarket, specifically in the baking and dairy sections. Dehydrated coconut is widely available in packaged grocery aisles. Use unsalted butter for best results.
Preparation method
- Mix the grated coconut with the warm water in a small bowl
- Let the coconut rest for about 5 minutes until it is well hydrated
- Place the hydrated coconut, eggs, egg yolks, sugar, and butter into a blender and pulse just enough to combine
- Grease a 1.5-litre microwave-safe refractory dish with butter and sprinkle with sugar, then pour the mixture in
- Microwave on medium power for 9 to 12 minutes until the custard begins to set
- Remove from the microwave, let it cool slightly, and carefully unmould onto a serving plate
- Wait for it to cool completely before serving to ensure the ideal texture
Observations
The quindão is a larger, popular variation of the traditional quindim. This simplified version uses the microwave to ensure speed without sacrificing the characteristic flavour of coconut and eggs. Tip: use a microwave-safe mould to ensure uniform cooking.
