Passion fruit puree (Purê de maracuja)

Ingredients

6 passion fruits
2 tablespoons of sugar
4 tablespoons of water

Where to find ingredients

Look for Brazilian ingredients such as requeijão, goiabada, guaraná soda, calabresa, cassava flour, tapioca starch, cachaça and jiló in Brazilian or Latin American grocers, international food shops, gourmet supermarkets and online speciality grocery sections. Standard produce, dairy, meat and pantry items are usually available in supermarkets, wet markets and neighbourhood grocery stores. If needed, use only clearly labelled substitutes here: cream cheese for requeijão, chorizo-style smoked sausage for calabresa, and panko or dry breadcrumbs where farinha de rosca is unavailable.

Preparation method

  1. Cut os maracujás ao meio
  2. Remove toda a polpa com as sementes e transfira para uma panela
  3. Add o açúcar e a water na panela com a polpa
  4. Take to the heat para aquecer until que o açúcar esteja completamente dissolvido
  5. Para obter uma textura mais espessa aguarde o início da fervura
  6. Reduce a intensidade da chama
  7. Continue cozinhando e mexendo ocasionalmente until o molho atingir a consistência de sua preferência

Observations

This puree is a great option for desserts or dishes that need a citrusy, refreshing touch. The method is simple and focuses on reducing the fruit pulp to the right texture.
