1 1/2 cups of water (for the syrup)
1/2 cup of water (optional, to adjust syrup consistency)
6 tablespoons of cold water
1 can (approx. 400g) of condensed milk
1 measure (using the condensed milk can) of whole milk
2 pots (approx. 340g) of plain yogurt
6 medium-sized red guavas
1/2 cup of granulated sugar
1 1/2 cups of water (for the syrup)
1/2 cup of water (optional, to adjust syrup consistency)
Where to find ingredients
You can find these ingredients at most local supermarkets. For the guava, look in the fresh produce section; if fresh guavas are unavailable, you may use high-quality canned guava paste (goiabada) as a substitute by thinning it with water, though fresh fruit is preferred for this specific recipe.
Preparation method
- Hydrate the gelatin powder in 6 tablespoons of cold water.
- Dissolve the hydrated gelatin in a bain-marie until completely smooth.
- Combine the condensed milk, whole milk, plain yogurt, and the dissolved gelatin in a blender and process until uniform.
- Pour the mixture into a central-hole mold that has been lightly dampened with cold water.
- Refrigerate for about 4 hours, or until the flan is thoroughly set.
- While the flan sets, prepare the syrup: peel the guavas and chop them into cubes.
- Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water.
- Cook over low heat for about 20 minutes, or until the guava pieces are soft and beginning to break down.
- Remove from the heat and transfer the mixture to a blender. Process until you have a smooth puree.
- Return the guava puree to the saucepan and simmer over low heat for another 15 minutes, stirring occasionally, until the syrup thickens.
- If the syrup becomes too thick during cooking, add the optional 1/2 cup of water to reach your desired consistency.
- Allow the guava syrup to cool completely before drizzling it over the unmolded flan.
Observations
This yogurt flan with guava coulis is a quintessential Brazilian treat that is both light and invigorating, making it an ideal finale for any meal. The contrast between the mellow, smooth yogurt base and the intense, tangy-sweet fruit reduction appeals to a wide variety of tastes.
