Ingredients
2.5 litres cold water
500 g green beans (feijão verde)
2 beef bouillon cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 clove garlic, crushed
1/2 tablespoon fresh coriander, chopped
2 1/2 cups white rice
150 g queijo coalho, thinly sliced

For the specialized ingredients: 'feijão verde' can be found at fresh produce markets; if unavailable, use a fresh young bean variety. 'Paio' is a firm smoked sausage; look for Portuguese or continental European deli sections in larger supermarkets, or use a high-quality local smoked sausage as a substitute. 'Queijo coalho' is a specific firm, salty Brazilian grilling cheese; if you can't find it at specialty import shops or a Latin deli, a firm halloumi is the closest regional substitute that retains its structure when heated.
Preparation method
- Soak the green beans in water overnight
- The next day, drain the beans and cook them in a pot with 2.5 litres of cold water and the beef stock cubes
- Cover the pot and cook on low heat for approximately 1 hour, or until the beans are tender
- While the beans are cooking, heat the oil in another pot
- Brown the paio sausage, grated onion, and crushed garlic in the oil
- Add the washed and drained rice and the chopped coriander to the sautée, and fry well for a few minutes
- Add the cooked beans with the cooking liquid to the rice mixture
- Mix all the ingredients, cover the pot and cook on low heat until the rice is cooked through and the mixture is moist and creamy
- Distribute the slices of coalho cheese over the rice
- Cover the pot again and let the steam melt the cheese for a few minutes
- Serve the Baião de Dois hot, accompanied by fried or roasted salted beef, if desired
