Where to find ingredients
In Ghana, look for Parmesan, cream, wheat flour, eggs and baking powder in supermarkets, neighbourhood provision shops and bakery supply stores. Queijo minas or queijo prato are best from shops carrying imported Brazilian or Latin ingredients; as substitutes only, use a mild semi-soft cheese that grates well.
Preparation method
- Start by combining the two cheeses, eggs, black pepper and cream in a bowl, mixing everything very well
- Add the wheat flour and baking powder gradually, folding them in until the dough reaches a soft, mouldable point
- Shape small balls with the help of two teaspoons
- Fry the balls in hot oil until they are deeply golden and crisp
