Preparation method
- Place the bulgur wheat in a bowl
- Cover with water and let it soak for 2 hours
- Rinse the bulgur under running water
- Drain well
- Squeeze the bulgur with your hands to remove all moisture
- Rinse the chopped onion under cold water and drain
- Mix the bulgur, onion, and all other ingredients
- Keep the tomatoes aside for later
- Cover the bowl and refrigerate for at least 8 hours
- Gently fold in the diced tomatoes just before serving
Observations
This recipe balances the texture of bulgur with the freshness of vegetables and aromatic herbs. Letting it rest in the fridge is key for the flavours to meld beautifully.
