Grilled Carrots with Honey (Cenoura grelhada com mel)

Ingredients

3 carrots
2 tablespoons honey
1 tablespoon limão-cravo juice
1/2 cup water
1 1/2 teaspoons olive oil
1 tablespoon cold butter
1/4 teaspoon allspice
Salt and freshly ground black pepper to taste
Mint leaves and parsley to taste, for garnish

Where to find ingredients

Look for carrots, lemons, honey, butter, olive oil, and ground allspice in the fresh produce, pantry, and dairy sections of supermarkets or at local markets; fresh mint and parsley are usually in the herb section. If needed, use regular lemon juice as a substitute for limão-cravo.

Preparation method

  1. Peel the carrots and cut them in half lengthwise
  2. Cut each half again crosswise on the diagonal
  3. Heat a large nonstick skillet over low heat
  4. Add the olive oil and arrange the carrots cut side down
  5. Season with salt and let them brown for 7 minutes without moving them
  6. Turn the carrots with tongs
  7. Season again with salt and black pepper
  8. Let the other side brown for another 3 minutes
  9. Combine the honey, allspice, lemon juice, and water in a separate bowl
  10. Pour this mixture into the skillet
  11. Cover and cook for about 10 minutes
  12. Watch until the carrots are cooked but still firm and the liquid has reduced by half
  13. Turn off the heat and add the butter
  14. Gently shake the skillet so the butter melts and forms a glossy sauce
  15. Coat the carrots well in the sauce
  16. Finish with mint leaves and parsley before serving

Observations

This recipe turns carrots into a refined dish with very little effort. The key is slow cooking in the sauce, which gives them a tender yet firm texture, finished with a butter emulsion that adds shine and deep flavour.
