Where to find ingredients
You can find fresh cauliflower, carrots, and radishes at local municipal markets or supermarket produce sections. Olive oil and spices like paprika are available in the pantry aisles of major grocery stores.
Preparation method
- Preheat your oven to 220 ºC.
- Wash the cauliflower florets in a bowl of water.
- Remove the florets from the water with your hands, leaving any sediment at the bottom of the bowl.
- Drain well using a colander.
- Clean the radish skins thoroughly with a small brush under running water.
- Dry the radishes and cut them into halves or quarters if they are large.
- Peel the carrots and cut them in half crosswise.
- Cut the thinner end of the carrots into four sticks lengthwise.
- Cut the thicker end of the carrots into six sticks lengthwise.
- Arrange all the vegetables in a large roasting tray.
- Drizzle the vegetables with the olive oil.
- Sprinkle with the paprika, salt, and black pepper.
- Toss everything well to ensure each piece is evenly coated with the seasoning and oil.
- Spread the vegetables out in the tray, leaving enough space between them so they roast evenly and get nicely browned.
- Place in the oven for approximately 30 minutes.
- Turn the vegetables with a spatula halfway through the cooking time to ensure they brown on all sides.
- Remove from the oven as soon as they are tender and golden.
- Serve immediately.
