Where to find ingredients
You can find dried lentils, spices, and aromatics at local supermarkets and fresh produce markets across Fiji. If you cannot find brown lentils, standard red lentils are a suitable substitute, though they may require slightly less cooking time.
Preparation method
- Finely dice the onion and mince the garlic.
- Heat the olive oil in a pressure cooker over medium heat.
- Sauté the onion with a pinch of salt until lightly golden.
- Add the minced garlic.
- Stir in the cumin and the bay leaf.
- Sauté for about one minute to release the aromatics.
- Add the dry lentils to the pot.
- Season with black pepper and a teaspoon of salt.
- Stir well to coat the lentils in the seasoning mixture.
- Pour the water into the pot.
- Seal the lid and increase the heat to high.
- Wait until the pressure cooker reaches full pressure and starts to whistle.
- Reduce the heat to the lowest setting.
- Cook for 5 minutes.
- Turn off the heat.
- Allow the pressure to release naturally before opening the lid.
- Serve the lentils while still warm.
Observations
Using a pressure cooker is the most efficient way to achieve perfectly tender lentils in just a few minutes. The addition of cumin elevates the flavor profile, making this side dish a nutritious staple for your everyday meals.
