Ingredients
1 kg butternut pumpkin
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
Where to find ingredients
You can find butternut pumpkin and fresh aromatics at local municipal markets or supermarket produce sections. If butternut is unavailable, any firm-fleshed pumpkin variety can be used as a substitute.
Preparation method
- Peel the pumpkin and cut the flesh into cubes approximately 2 cm in size.
- Finely mince the garlic cloves.
- Place a large saucepan or frying pan over medium heat with the olive oil.
- Add the garlic and sauté for 1 minute just to scent the oil, taking care not to burn it.
- Add the pumpkin cubes and the salt to the pan.
- Stir the ingredients occasionally for 10 minutes, until the pumpkin starts to soften.
- Place the lid on the pan and reduce the heat to the lowest setting.
- Cook for 5 minutes to allow the pumpkin to finish softening in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your preferred texture.
- Turn off the heat and serve immediately.
Observations
