Ingredients
2.5 litres cold water
500 g fresh green beans (feijão verde)
2 beef bouillon cubes
3 tbsp vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tbsp fresh cilantro, chopped
2 1/2 cups white rice
150 g queijo de coalho, thinly sliced
500 g fresh green beans (feijão verde)
2 beef bouillon cubes
3 tbsp vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tbsp fresh cilantro, chopped
2 1/2 cups white rice
150 g queijo de coalho, thinly sliced
Where to find ingredients
You can find fresh beans and standard aromatics at any local grocery store. For the Brazilian staples, look for 'paio' and 'queijo de coalho' at Latin American markets or specialty food shops in your area. As a substitute for queijo de coalho, a firm, non-melting halloumi is the closest alternative in texture and saltiness.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a pot with 2.5 litres of cold water and the bouillon cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the oil in a separate large pot.
- Sauté the sliced paio, grated onion, and crushed garlic in the oil until browned.
- Stir in the rinsed and drained rice and the chopped cilantro, sautéing for a few minutes to toast the grains.
- Add the cooked beans along with their cooking liquid to the rice mixture.
- Stir everything well, cover the pot, and cook on low heat until the rice is tender and the mixture is moist and slightly creamy.
- Arrange the slices of queijo de coalho evenly over the top of the rice.
- Cover the pot again and let it sit for a few minutes so the residual steam can melt the cheese.
- Serve the dish hot, ideally accompanied by fried or roasted carne-de-sol if desired.

This robust dish artfully combines rice and beans with savory additions like cured sausage, local firm cheese, and aromatic herbs, creating a complete and soul-satisfying meal. It is a straightforward dish to prepare, making it just as suitable for a weekday dinner as it is for a weekend gathering.
