Ingredients
1 tbsp olive oil
1/2 onion, finely diced
1 bay leaf
1 cup long-grain white rice
1/2 tsp salt
2 cups boiling water
1/2 onion, finely diced
1 bay leaf
1 cup long-grain white rice
1/2 tsp salt
2 cups boiling water
Where to find ingredients
You can find all these pantry staples at local supermarkets or neighborhood grocery stores throughout Belize. Look for long-grain white rice in the grain aisle and fresh onions and aromatics in the produce section.
Preparation method
- Dice the onion into very small cubes.
- Bring the water to a boil.
- Warm a medium saucepan over low heat.
- Add the olive oil and the onion to the pot.
- Add a pinch of salt.
- Sauté the onion for 2 minutes until it becomes translucent and soft.
- Stir in the bay leaf.
- Add the rice and stir for 1 minute to ensure the grains are well coated in the oil.
- Pour the boiling water over the rice.
- Season with the remaining salt and stir gently.
- Increase the heat to medium.
- Do not stir the rice again from this point on.
- Wait until the water level reaches the top of the grains.
- Reduce the heat to low and cover the pot partially with a lid.
- Cook until you notice that all the water has been absorbed.
- Test the doneness by inserting a fork and pushing the grains aside to check the bottom of the pan.
- Leave it on the heat for a few more moments if there is still any moisture.
- Turn off the heat and keep the pot covered for 5 minutes so the trapped steam finishes the cooking process.
- Fluff the grains gently with a fork before serving.
