White Bean Vinaigrette with Rosemary (Vinagrete de feijão branco)

Ingredients

2 tins white beans (equal to 3 cups cooked beans)
1 red onion
2 tomatoes
1/4 cup olive oil
3 tablespoons red wine vinegar
2 sprigs rosemary (2 tablespoons fresh leaves)
1 teaspoon salt
Freshly ground black pepper to taste

Where to find ingredients

In Belize, tinned white beans, olive oil, red wine vinegar, salt and black pepper are usually available in supermarkets and grocery shops. Red onion, tomatoes and fresh rosemary can be found in produce sections, farmers' markets or larger stores with fresh herb chillers. If fresh rosemary is not available, dried rosemary may be used only as a substitute, while fresh rosemary remains the ideal ingredient.

Preparation method

  1. Open the tins of beans and drain the liquid in a sieve
  2. Rinse the beans gently under running water to remove excess sodium and leave them to drain completely
  3. Peel the onion and slice it into thin 0.5 cm strips
  4. Wash the tomatoes
  5. Cut the tomatoes in half and remove the seeds
  6. Chop the tomato halves into 0.5 cm cubes
  7. Strip the leaves from the rosemary sprigs
  8. In a large frying pan off the heat, add the olive oil, sliced onion and rosemary leaves
  9. Place the frying pan over medium heat and warm for 2 minutes
  10. Transfer the mixture from the frying pan to a large bowl
  11. Add the vinegar, salt and black pepper
  12. Fold the beans and tomatoes into the dressing
  13. Mix everything gently and serve right away

Observations

This vinaigrette brings together soft white beans, juicy tomato and a warm rosemary oil that takes the sharp edge off the onion. The result is a simple but elegant side with fresh flavour, good texture and a dressing that clings nicely to the beans.
