1/2 yellow bell pepper
2 medium tomatoes
1/4 cup extra virgin olive oil
2 tablespoons white wine vinegar
Juice of 1 lime
1/4 cup fresh cilantro leaves

Where to find ingredients
Black-eyed peas can be found in the dry beans section of most local supermarkets. If fresh cilantro is hard to find, check the herb section or your local market stall; 'cilantro' is the standard term used here. Red onions and bell peppers are readily available in the produce section. Use standard white wine vinegar found in the condiments aisle. For authentic Brazilian flavor, ensure the lime juice is fresh-pressed.
Preparation method
- Place the black-eyed peas in a pressure cooker
- Add the 4 cups of water
- Secure the lid and set over high heat
- Once the cooker reaches pressure and starts whistling, lower the heat
- Cook for 10 minutes
- While the peas cook, dice the red onion into small pieces
- Remove the seeds from the yellow bell pepper and dice finely
- Halve the tomatoes, scoop out the seeds, and dice the flesh
- Wash and finely chop the fresh cilantro leaves
- In a large mixing bowl, combine the diced onion, bell pepper, and tomato
- Turn off the heat and allow the pressure to release naturally before opening the pot
- Drain the cooked peas using a colander
- Rinse the peas under cold running water to stop the cooking process, then drain well
- Add the cooked black-eyed peas to the bowl with the prepared vegetables
- Drizzle with the olive oil, white wine vinegar, and lime juice, then season with salt and pepper
- Gently fold all the ingredients together to combine
- Serve the vinaigrette immediately, garnished with the remaining fresh cilantro
