Where to find ingredients
Rice, carrots, onions, and salt are pantry staples available at any local grocery store or supermarket across Belize. Look for long-grain white rice in the grain aisle. Fresh produce like carrots and onions can be found in the fresh fruits and vegetables section of any local shop or market. Olive oil and bay leaves are standard items in the baking or spice aisles.
Preparation method
- Wash and peel the carrot
- Finely grate the carrot using the smallest holes of your grater
- Finely dice the onion
- Heat a little more than 3 cups of water in a kettle until boiling
- Place a medium saucepan over low heat
- Add the olive oil to the pan
- Add the diced onion and grated carrot
- Season with the salt
- Sauté the vegetables for 2 minutes until they soften slightly
- Add the rice and the bay leaf to the pan
- Stir well to ensure every grain of rice is coated in the oil
- Measure exactly 3 cups of the boiling water and pour it over the rice
- Give it one last stir and turn the heat up to medium
- Do not stir the rice again from this point on
- Wait until the water level drops to meet the level of the grains
- Reduce the heat to the lowest setting
- Partially cover the saucepan with a lid
- Cook until all the water has been absorbed
- Check for doneness by inserting a fork all the way to the bottom of the pan
- Turn off the heat
- Keep the pan covered for another 5 minutes to let the steam finish the cooking
- Gently fluff the grains with a fork
- Fold in the carrots delicately
- Transfer to a serving bowl and serve immediately
Observations
Adding grated carrots is a classic way to brighten up your daily staple, infusing it with vibrant color and a touch of sweetness. The secret to achieving perfectly light, fluffy grains is to toast the rice well in the oil before adding the boiling water.
