Ingredients
2.5 liters cold water
500 g green beans (feijão verde)
2 beef bouillon cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 clove garlic, crushed
1/2 tablespoon fresh cilantro, chopped
2.5 cups white rice
150 g queijo coalho, thinly sliced
500 g green beans (feijão verde)
2 beef bouillon cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 clove garlic, crushed
1/2 tablespoon fresh cilantro, chopped
2.5 cups white rice
150 g queijo coalho, thinly sliced
Where to find ingredients
You can find essential Brazilian items like paio and queijo coalho at specialty Latin American markets or international grocers. For the green beans, check the produce section of your local fresh market. If you cannot find queijo coalho, a firm, high-melting-point white cheese like halloumi serves as a suitable substitute.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a pot with 2.5 liters of cold water and the bouillon cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the oil in a separate large pot.
- Sauté the sliced paio, grated onion, and crushed garlic in the hot oil until golden brown.
- Add the rinsed and drained rice along with the cilantro to the pan, stirring well for a few minutes to toast the grains.
- Pour the cooked beans along with their cooking liquid into the rice mixture.
- Stir everything thoroughly, cover the pot, and cook over low heat until the rice is tender and the mixture is moist and slightly creamy.
- Distribute the thin slices of queijo coalho evenly over the top of the rice.
- Cover the pot again and let the residual steam melt the cheese for a few minutes.
- Serve the dish hot, traditionally accompanied by fried or roasted carne-de-sol.
Observations
Baião de Dois is a quintessential Brazilian comfort food, deeply rooted in the traditions of the Northeast and North regions. This robust dish marries rice and beans in a single pot, elevated by the smoky depth of paio sausage and the unique, semi-firm texture of queijo coalho. It serves as a complete, soul-warming meal that is both approachable for weeknight cooking and impressive enough for family gatherings.
