2 cups (chá) sugar
100 g shelled walnuts, ground
100 g semi-sweet chocolate, grated

300 g butter

Where to find ingredients
Look for shelled walnuts, semi-sweet chocolate, and instant coffee at your local supermarket or specialty food stores. All-purpose flour, eggs, butter, condensed milk, and brandy are widely available at grocery stores. If you can't find instant coffee, you can use strongly brewed coffee, but reduce the liquid in the cake batter slightly.
Preparation method
- Beat egg whites until stiff peaks form
- Incorporate egg yolks one by one
- Gradually add sugar, ground walnuts, grated chocolate, and boiling milk
- Gently mix in the sifted all-purpose flour with the baking powder
- Transfer the batter to a greased round cake pan
- Bake in a preheated medium oven at 180°C (350°F) for about 40 minutes
- Remove from oven, invert onto a rack, and let cool completely
- For the filling, beat the butter until creamy
- Dissolve the instant coffee in 1 tablespoon of hot water
- Gradually add the condensed milk and dissolved coffee to the butter, beating until a smooth cream forms
- Slice the cake in half and drizzle both halves with brandy
- Spread one layer of the frosting in the center and cover the entire top of the cake with the remaining cream
Observations
This recipe yields a balanced and sophisticated cake. The secret to a successful preparation is beating the butter well to ensure the frosting is light and smooth.
