Where to find ingredients
You can find essential items like sweetened condensed milk and plain yogurt at any local supermarket in Barbados, such as Massy Stores or Popular Discounts. For fresh guavas, check the produce section of your local community market or green grocer. If fresh red guavas are out of season, high-quality guava paste thinned with a little water can serve as a substitute for the sauce.
Preparation method
- Hydrate the powdered gelatin in 6 tablespoons of cold water.
- Place the hydrated gelatin in a bain-marie until it has completely dissolved.
- In a blender, combine the sweetened condensed milk, milk, plain yogurt, and the dissolved gelatin.
- Pour the mixture into a ring mold that has been lightly dampened with water.
- Refrigerate for approximately 4 hours, or until the flan is set and firm.
- While the flan sets, prepare the sauce: peel and chop the guavas into small cubes.
- Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water.
- Cook over low heat for about 20 minutes, or until the guavas are very tender and beginning to break down.
- Remove from the heat and transfer the mixture to a blender. Process until a smooth puree is obtained.
- Return the guava puree to the saucepan and cook over low heat for another 15 minutes, stirring occasionally, until the sauce thickens.
- If the sauce becomes too thick during cooking, stir in the optional 1/2 cup of water to reach the desired consistency.
- Allow the guava sauce to cool down completely before pouring it over the chilled flan to serve.
