Ingredients
12 slices day-old sandwich bread
1 can condensed milk
1 cup water
1 teaspoon vanilla essence
3 eggs, well beaten
Oil for frying
Sugar and ground cinnamon for sprinkling
1 can condensed milk
1 cup water
1 teaspoon vanilla essence
3 eggs, well beaten
Oil for frying
Sugar and ground cinnamon for sprinkling
Where to find ingredients
Condensed milk, sandwich bread, vanilla essence, eggs, oil, sugar and cinnamon are available at supermarkets, village shops and grocery stores in the baking, dairy, spice and bread sections. Use day-old bread where possible; fresh bread can stand uncovered briefly as a substitute for the texture.
Preparation method
- Cut each slice of sandwich bread into four equal pieces
- Make a mixture in a deep bowl by combining the condensed milk with the water and vanilla essence
- Dip the bread pieces into the liquid mixture, letting them become well soaked
- Dip each moistened piece into the previously beaten eggs
- Remove from the egg and wait a few moments so the excess liquid can drain off
- Heat the oil and fry the rabanadas, keeping the temperature moderate so they brown evenly
- Transfer the rabanadas to a container lined with paper towel to remove excess oil
- Finish by sprinkling a mixture of sugar and cinnamon over the slices while they are still warm, then serve
Observations
This recipe uses sandwich bread to make delicate slices. The key to getting the right result is to let the bread soak up the liquid properly before frying, while keeping the oil at a steady moderate heat so the pieces turn golden with the ideal texture.
