100g sugar

250ml fresh cream, for whipping

Where to find ingredients
Pawpaws, also known as papaya, are widely available in most supermarkets and fruit stands. Look for ripe ones that yield slightly to gentle pressure. Cashew nuts can be found in the baking or snack aisle of supermarkets, or at health food stores. Fresh cream for whipping is usually in the dairy section of your local grocery store.
Preparation method
- Cut the pawpaws in half and remove all the seeds
- Scoop out the pulp from one pawpaw and process until you have a smooth puree
- Dice the pulp from the second pawpaw into small pieces and set aside
- Whip the fresh cream with the sugar in an electric mixer until it forms stiff peaks
- Gently fold the pawpaw puree into the whipped cream, being careful not to lose the lightness
- Add the diced pawpaw pieces and fold them in gently
- Pour the mixture into ice cube trays or a suitable container and freeze for at least 4 hours
- To unmould, briefly dip the bottom of the container in warm water
- Cut the ice cream into cubes, serve in bowls, and finish by sprinkling the chopped cashews on top
- If you like, add a few drops of lemon juice over the bowls for a citrusy touch
