Shrimp Bobó

Ingredients

1 kg fresh shrimp
Salt to taste
3 cloves garlic, minced and crushed
Juice of 1 lemon
Black pepper to taste
1 kg cassava, peeled
1 onion, sliced into rounds
1 bay leaf
2 onions, grated
6 tablespoons olive oil
2 bottles coconut milk
2 cans tomato sauce
1 bunch fresh herbs (parsley and scallions), chopped
2 green bell peppers, chopped
2 tablespoons palm oil

Preparation

  1. Wash the shrimp well
  2. Season them with salt
  3. garlic
  4. pepper
  5. and lemon juice
  6. Leave to marinate for a few minutes
  7. Cook the cassava in a pot with water
  8. the bay leaf
  9. and the sliced onion
  10. When the cassava is very soft
  11. add one of the bottles of coconut milk
  12. Let the mixture cool slightly
  13. blend everything in a blender until you get a smooth cream
  14. Heat the olive oil in a large pot and sauté the grated onion
  15. Add the seasoned shrimp and sauté until they change color
  16. Add the tomato sauce
  17. fresh herbs
  18. and bell peppers
  19. Cook for a few minutes
  20. Incorporate the blended cassava cream
  21. the second bottle of coconut milk
  22. and the palm oil
  23. Bring to a boil
  24. turn off the heat when it is well heated
