Ingredients

45 g bulgur wheat
200 g tomatoes, seeded and chopped
1 onion, chopped
2 cucumbers, chopped
1 bunch fresh parsley, chopped
Fresh mint, chopped
3 tablespoons lemon juice
2 tablespoons extra virgin olive oil
Salt to taste
Black pepper to taste
1/4 teaspoon nutmeg

Where to find ingredients

Bulgur wheat can be found in the international or grains aisle of most major supermarkets or in specialty Middle Eastern grocery stores. Fresh herbs, vegetables, and pantry staples like olive oil and spices are available at any local produce market or grocery store.

Preparation

  1. Place the bulgur wheat in a bowl
  2. Cover with water and let it hydrate for 2 hours
  3. Rinse the wheat under running water
  4. Drain well
  5. Squeeze the wheat with your hands to remove all excess moisture
  6. Rinse the chopped onion under cold water and drain
  7. Combine the wheat, onion, and all other ingredients in a large bowl
  8. Set aside the tomatoes to add at the very end
  9. Cover the container and refrigerate for at least 8 hours
  10. Fold in the chopped tomatoes just before serving

Notes

This recipe perfectly balances the texture of bulgur wheat with the crisp freshness of vegetables and aromatic herbs. Letting the salad rest in the refrigerator is essential for the flavors to meld together beautifully.
