45 g bulgur wheat

2 tablespoons extra virgin olive oil
Salt to taste
Black pepper to taste
1/4 teaspoon nutmeg

Preparation
- Place the bulgur wheat in a bowl
- Cover with water and let it hydrate for 2 hours
- Rinse the wheat under running water
- Drain well
- Squeeze the wheat with your hands to remove all excess moisture
- Rinse the chopped onion under cold water and drain
- Combine the wheat, onion, and all other ingredients in a large bowl
- Set aside the tomatoes to add at the very end
