Where to find ingredients
You can find fresh, ripe tomatoes and high-quality basil at local farmers' markets, greengrocers, or the produce section of any standard supermarket.
Preparation
- Wash and dry the tomatoes thoroughly
- Remove the top of each tomato
- Place the tomato cut-side down on a cutting board
- Slice into quarters and then into eighths to get 8 equal wedges
- Place the tomato wedges in a sieve or colander set over a bowl
- Sprinkle the coarse salt over them and mix well so they are all evenly coated
- Cover the container with plastic wrap or a plate
- Refrigerate for 24 hours to allow the tomatoes to drain and maintain their texture
- If you need to serve sooner, let them drain for at least 30 minutes
- Remove from the refrigerator right before serving
- Discard the liquid accumulated in the bowl
- Shake the wedges gently to remove any excess coarse salt
- Arrange the tomatoes on a serving plate
- Finish by drizzling with olive oil and seasoning with black pepper
- Add fresh basil leaves to taste and serve
Notes
This preparation highlights the tomato as the star of the dish. The salt-draining process improves the texture and intensifies the flavor, resulting in a light and aromatic side dish.
