Ingredients

1 1/4 cups milk
1/4 cup boiling water
2 eggs
3/4 cup sugar
3 cups water for the bain-marie and syrup
1 can sweetened condensed milk

Preparation method

  1. Crack the eggs individually into a small bowl and transfer to a larger mixing bowl.
  2. Whisk the eggs gently with a wire whisk to combine yolks and whites.
  3. Add the sweetened condensed milk and incorporate well into the egg mixture.
  4. Pour in the milk gradually, stirring gently to avoid forming air bubbles.
  5. Set the pudding batter aside.
  6. In a pan, melt the sugar over low heat until golden, stirring with a spatula.
  7. Carefully add 1/4 cup boiling water to the caramel syrup, watching out for splashes.
  8. Stir until the syrup is smooth.
