For the best result, select tart apple varieties like Granny Smith or similar crisp red varieties available in the fresh produce section. If you prefer to substitute the red wine, you may use apple juice or a splash of water, though the wine adds essential depth.
Preparation method
- Cream the butter and sugar together until the mixture is smooth and homogeneous.
- Add the egg yolk and one tablespoon of the red wine to the creamed mixture.
- Gradually incorporate the flour into the wet ingredients.
- Work the dough until it becomes uniform.
- Note that the dough will naturally have an oily and tacky consistency.
- Divide the dough into two portions, using 2/3 for the base and 1/3 for the top.
- Let both portions of the dough rest in the refrigerator for 30 minutes.
