Where to find ingredients
Find these ingredients in local supermarkets and specialized butcher shops. If unavailable, use firm halloumi as a substitute for queijo coalho and smoked chorizo or similar firm sausage for the paio.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and cook them in a pot with 2.5 liters of cold water and the bouillon cubes.
- Cover the pot and cook over low heat for approximately 1 hour, or until the beans are tender.
- While the beans are cooking, heat the oil in a separate pan.
- Brown the sliced paio, grated onion, and crushed garlic in the oil.
- Add the washed and drained rice and the chopped cilantro to the sautéed base, and fry for a few minutes.
- Add the cooked beans along with their cooking broth to the rice mixture.
- Stir all ingredients together, cover the pot, and cook over low heat until the rice is tender and the mixture is moist and creamy.
- Arrange the slices of queijo coalho over the rice.
- Cover the pot again and let the steam melt the cheese for a few minutes.
- Serve the Baiao de Dois hot, accompanied by fried or roasted carne-de-sol, if desired.
