Ingredients
1 cup rice
2 cups water
1 tablespoon olive oil
1/2 onion
1 bay leaf
1/2 teaspoon salt
zest of 1 Tahiti lime
2 cups water
1 tablespoon olive oil
1/2 onion
1 bay leaf
1/2 teaspoon salt
zest of 1 Tahiti lime
Where to find ingredients
Look for the rice, bay leaf, salt and lemon in the grains, herbs and fresh produce sections of a supermarket or market. Olive oil is usually in the cooking oils aisle.
Preparation method
- Peel the onion and chop it into very small pieces
- Put the water in a kettle and bring it to a low heat until it boils
- Heat a medium saucepan over low heat
- Add the olive oil and the chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion softens
- Add the bay leaf and the rice to the pan
- Stir for about 1 minute so the grains are coated in oil, which helps keep them fluffy
- Measure out 2 cups of the boiling water and pour it over the rice
- Season with the remaining salt and mix
- Increase the heat to medium
- Do not stir from this point on
- Wait for the water to dry until it reaches the level of the grains
- Reduce the heat and partially cover the pan
- Cook until all the water has been absorbed
- Check the bottom of the pan with a fork to make sure the water has dried out completely
- Turn off the heat
- Add the lemon zest
- Cover the pan completely
- Let the rice rest in the steam for 5 minutes
- Use a fork to loosen the grains and mix in the zest
- Transfer to a bowl and serve immediately
