1 clean turkey (approx. 4 kg)

Preparation
- Preheat the oven to 180°C
- Blend the onions, hot sauce, mustard, one cup of wine, one cup of chicken broth, the cup of melted butter, and salt in a blender until the mixture is uniform
- Pour this mixture into a large bowl and stir in the remaining wine and chicken broth
- Place some of the marinade inside the cavity of the turkey
- Place the turkey in an ungreased roasting pan
- Gently use your hands to loosen the skin of the breast to create a pocket between the skin and the meat
- Pierce the breast meat with a fork
- Use a culinary injector to apply the extra melted butter into various strategic points of the breast
- Spread the blended marinade all over the outside of the turkey
- Inject some of the marinade liquid directly into the denser parts of the meat
- Reposition the skin over the breast
- Secure the cavity with thick culinary twine to ensure the seasoning stays inside
- Cover the roasting pan with aluminum foil
- Place the turkey in the oven for about 3 hours
- Every 20 minutes, open the oven and baste the turkey with the juices that accumulate in the pan
- Once the cooking time is complete, remove the foil
- Let the turkey brown in the oven until the skin is beautiful and crispy
