500 g chicken drumsticks and thighs
200 g bacon, diced
1 large onion, chopped
5 garlic cloves, minced
500 g potatoes, cubed

Where to find ingredients
Beef tripe and pork ribs are best sourced from a local butcher (butcher shop). Look for fresh white beans in the dried goods section of major supermarkets. Chicken pieces and potatoes are standard produce. For authentic cassava flour (farofa), check the international or 'specialty' foods aisle in supermarkets or visit an ethnic grocery store that stocks Latin American ingredients.
Preparation method
- Boil the white beans in a large pot until they are tender
- Drain the cooked beans and set them aside
- Parboil the tripe in water for about 40 minutes
- Drain the tripe, discard the water, and set aside
- In a heavy-based pot, fry the bacon until golden and crispy
- Stir in the chopped onion and minced garlic, sautéing until they are translucent and fragrant
- Add the pork ribs and chicken pieces to the pot
- Sear the meats thoroughly until well browned on all sides
- Pour the chicken stock over the browned meats
- Simmer until the meats are cooked through and tender
- Incorporate the pre-cooked white beans and the prepared tripe into the stew
- Add the cubed potatoes to the pot
- Continue to cook until the potatoes are tender and the sauce has thickened nicely
- Finish the dish by generously sprinkling with fresh chopped parsley
- Serve hot alongside steamed white rice and toasted cassava flour (farofa)
Observations
This hearty stew is a fantastic choice for a family lunch. The secret to a perfect batch lies in slowly cooking the meats until they reach a melt-in-the-mouth tenderness, resulting in a deeply flavorful and rustic dish that truly hits the spot.
