Ingredients
1 packet unflavored gelatin powder
6 tbsp cold water
1 can condensed milk
1 can milk (use the empty condensed milk can for measurement)
2 containers plain yogurt
6 medium red guavas
1/2 cup sugar
1 1/2 cups water (for the syrup)
1/2 cup water (optional, for the syrup)
6 tbsp cold water
1 can condensed milk
1 can milk (use the empty condensed milk can for measurement)
2 containers plain yogurt
6 medium red guavas
1/2 cup sugar
1 1/2 cups water (for the syrup)
1/2 cup water (optional, for the syrup)
Where to find ingredients
Find fresh dairy, canned condensed milk, and fresh guavas at local markets or supermarkets. For the unflavored gelatin, check the baking supplies aisle. As a substitute for fresh guavas, one could use high-quality guava paste thinned with water, though fresh fruit is the ideal choice for the best flavor.
Preparation method
- Hydrate the gelatin powder in 6 tablespoons of cold water.
- Heat the hydrated gelatin in a bain-marie until completely dissolved.
- In a blender, process the condensed milk, milk, plain yogurt, and the dissolved gelatin.
- Pour the cream into a center-hole mold that has been lightly moistened with water.
- Refrigerate for approximately 4 hours, or until the flan is firm.
- While the flan sets, prepare the syrup: peel and cut the guavas into cubes.
- Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water.
- Cook over low heat for about 20 minutes, or until the guavas are very soft and beginning to break down.
- Remove from heat and transfer the mixture to a blender. Blend until you obtain a smooth purée.
- Return the guava purée to the saucepan and cook over low heat for another 15 minutes, stirring occasionally, until the syrup thickens.
- If the syrup becomes too thick during cooking, add the remaining 1/2 cup of water to adjust the consistency.
- Let the guava syrup cool completely before serving it over the flan.
