Ingredients

300g chicken breast fillets
Lemon juice to taste
Black pepper to taste
1/2 cup tomato sauce
4 slices mozzarella cheese
1 teaspoon dried oregano
2 teaspoons grated Parmesan cheese

Preparation method

  3. Gently flatten the fillets using a meat mallet or a heavy rolling pin
  4. Peel away the cling film from the flattened fillets
  5. Arrange the fillets neatly on a baking tray
  6. Pop them into a preheated oven at 180°C for 20 minutes
  7. Take the tray out of the oven carefully
  8. Spoon the tomato sauce generously over each chicken fillet
  9. Layer the slices of mozzarella cheese over the top of the sauce
  10. Sprinkle the oregano and grated Parmesan cheese over the mozzarella
  11. Return to the oven for another 5 minutes, or until the cheese is bubbly and melted
  12. Serve immediately while hot
