You can find fresh cassava (often labeled as muhogo or manioc) in local markets and grocery stores throughout Tanzania. Look for firm, blemish-free roots in the produce section. Olive oil and basic seasonings are readily available in the cooking oils and spices aisles of any major supermarket.
Preparation method
- Preheat your oven to 220°C.
- Peel the cassava thoroughly.
- Cut it into large pieces of approximately 8 cm.
- Rinse the pieces well under running water.
- Place the cassava pieces in a pressure cooker.
- Cover with water, ensuring you do not exceed two-thirds of the pot's capacity.
- Cover and place over high heat.
- Once the pressure cooker reaches high pressure and starts to whistle.
- Reduce the heat and cook for 5 minutes.
- The target texture is tender yet firm enough to be sliced without falling apart.
- Turn off the heat.
- Wait for the pressure to release completely before opening.
- Drain the water well in a colander.
- Allow the pieces to cool slightly before handling.
- Grease a large baking sheet with half of the olive oil.
- Slice each cassava piece in half lengthwise.
- Cut each half into sticks about 2 cm thick.
- Arrange the sticks on the baking sheet without overlapping them.
- Drizzle with the remaining olive oil.
- Season with salt and pepper to taste.
- Bake for approximately 40 minutes.
- Flip the sticks halfway through the cooking time to ensure they brown evenly.
- Remove from the oven and serve immediately.
